Shanghainese cold appetizer where chicken is steeped in rice wine. The version served at 369 is served as a sliced roulade (elegant and eases eating). Besides the light wine marinade perfuming the silky dense flesh, it’s the aspic that’s trapped between the skin and meat that I love. Slightly salty, but that’s why it’s a great appetite whetter.
